Everyone loves recipes, right? Well we do! Especially a sweet recipe like this one from Mrs. Clay for Chess Cookies.
For those of you who don’t know Mrs. Clay, she is the wife of DOCO’s board member Jack Clay. She’s as sweet as this cookie recipe and was kind enough to share it with us. Around the office, it’s one of our favorites. As a former, Home Education teacher, Mrs. Clay has a few versions of this recipe and options to modify it to your liking. In fact, some of you may have met Mrs. Clay in the classrooms or hallways of Westover Highschool where she taught for many years.
- 1 box of yellow cake mix
- 1 stick of margarine (melted)
- 3 eggs
- 8 oz. cream cheese (softened)
- 1 16 oz. box of powdered sugar
- 2 tablespoons of butter (melted)
Mix the cake mix, margarine, and 1 egg together by hand. Press in bottom of greased 9″ x 13″ pan.
Mix the cream cheese, powdered sugar, 2 eggs, and 2 tbsp. of melted butter together. Spread on top of cake.
Bake at 350° for 45 – 50 minutes. Cool and cut into squares.
For variations try other cake mixes, including chocolate, strawberry, or pumpkin!
